Orzo pasta is made with semolina flour, which in turn is made of durum wheat. What can be confusing is that it's categorized in the grain food group, and can be made with whole-wheat flour, but it's not a whole-grain.
And despite its similarities to rice, it is definitively not gluten-free. But you can still enjoy it if you're counting carbs: Good Housekeeping Nutrition Director Jaclyn London gives you the lowdown on how to have your pasta without overdoing it. As with most pastas, it's worth spending a little more for a quality brand that uses semolina with a higher protein content.
This creates a sturdier pasta that stands up better to cooking without getting gummy or mushy. You can find orzo in multiple colors — black from squid ink, green from spinach or orange from tomato — but the flavor remains primarily the same.
The simplest way to prepare orzo is to boil it in a pot of salted water and drain it as you would any other pasta. It cooks to al dente in about 8 to 10 minutes.
Prepare as you would a typical risotto recipe, and after adding in the mock rice, reduce the temperature to simmer, occasionally stirring to avoid the pasta from sticking to the bottom of the pan. And if you add orzo to soups , it's best to add this pasta near the end so it doesn't become overcooked or mushy. As an alternative, cook it separately and ladle it in when dishing up the soup. If you have a recipe that calls for orzo but you don't have any on hand, you can use rice in its place.
Just account for the cook time difference. Boil-in-bag rice is a faster-cooking alternative that will most closely resemble orzo. If you need a quick-cooking pasta alternative rice can take too long in some cases , look for ditalini , pastina , or the petite star-shaped stelline.
